Wednesday, February 15, 2012 at 4:59PM Spring is coming (ok we may be getting slightly ahead of ourselves) and that means American Shad begin running upriver to spawn. Shad fillet is quite tasty, however the fish is best known for its ruby red roe, which has a delicate and full flavor when cooked. The "Foie Gras" of the sea is available for a limited amount of time, so make sure you stop by soon to take advantage.
