Weekend Specialties 06.28.12

If you're smart, you're probably celebrating the 4th over the next two weekends.  After all, what are we supposed to do when it falls on a Wednesday?!  It wouldn't be a 4th of July specialty issue without the requisite grilling rundown, so check out some of our favorite seafood grilling recipes below as well as our highlights of product that you should throw on the grill next week.  Of course if you really want to do the 4th right, you'll grill some split lobsters like we did at the Great Googamooga Food Festival (pictured above).  Please note we will be closed on Wednesday July 4th, but open normal hours every other day.     

Grilled half-split Lobsters

  1. Steam or boil live lobsters 2 minutes less than recommended for size
  2. Place lobsters in refrigerator to cool
  3. With a knife and lobster on its back, split lobster down the middle starting at the head and working your way through the body and tail.
  4. Crack claws and knuckles 
  5. Liberally apply salted drawn butter to entire body of lobster.
  6. Throw on hot grill and cook for 1-2 minutes or until a nice char has been made on tail meat and meat is hot to touch.
  7. Serve immediately with drawn salted butter and lemons

Grilled Oysters - The sizzling garlic-butter sauce combined with the caramelized sweet and salty flavor of the oyster is perfect with local Hog Neck oysters.  Check out this recipe here. 

Indonesian Grilled Swordfish - Swordfish at its finest, on the grill.  Lemon juice, ginger, garlic and mustard combine for a refreshing, well balanced dish.  Check out this recipe here. 

Grilled Head-on Prawns with Habanero-Toasted Garlic Vinaigrette - Make sure you keep the heads on and drink the delicious natural broth that spills out when ripping off the heads after cooking!  Check out this recipe here.
