Firmly hold the oyster against the table in a folded towel with the hinge side towards you and the cup side down.
Insert the knife through the hinge angling the blade down into the cup of the oyster. When you feel the knife sink in, use a twisting motion to pry the shells apart.
Scrape the blade across the top of the shell removing all the meat and muscle. Remove the top shell.
Repeat across the bottom shell, sliding the knife under and loosen the oyster from its shell.
Serve and enjoy immediately.
