Wreckfish and Weekend Specialties 6.25.15 June 24 2015 Posted in

We have some great looking Wreckfish coming in this week.  Although Wreckfish are found all along the East Coast, most commercial landings are from the Charleston Bump, a deep-water bank located 80 to 100 miles off the cost of South Carolina.  Wreckfish enjoy deep-water habitats around sheltered structures and are caught using heavy-duty hydraulic reels with 1/8 inch cables.  The fishery is well managed to ensure long term sustainability.  While they can be tough to catch, the result is well worth the effort.  Wreck fish have a large flake, sweat flavor and nice skin that crisps well.  Check out this recipe for Wreckfish, succotash, tomato & herbs if you’re looking for ideas.

Sockeye Salmon and Weekend Specialties 6.18.15 June 17 2015 Posted in

Sockeye Salmon runs have started in earnest and the product is looking great.  We have a nice shot coming in for this weekend and should expect to see it regularly through August. Sockeye are Wild-caught in rivers throughout the Pacific Northwest using a variety of methods including trolling, seines and gillnets. This week's catch comes from Kodiak, Alaska and was caught using gillnets.  Sockeye have a mild salmon taste and a delicate, colorful and large flaked flesh.  Not sure how to cook it? try this recipe

National Lobster Day (June 15th) and Weekend Specialties 6.11.15 June 10 2015 Posted in

What’s the deal with National Lobster Day?  Glad you asked.  Given the proliferation of national food days, it’s only fitting we jump in.  It just so has it that this Monday June 15th, is National Lobster Day.  To kick things off in style, we’re offering two great specials.  The Lobster Place Seafood Market will be offering one 1.5lb steamed lobster, choice of side and beer or wine for $25.   If you’re looking for more of a sit down, Cull&Pistol is bringing back the foot long lobster roll.  Of course if you’re a pro, pick up a live one and try the featured split grilled lobster recipe.

Amberjack and Weekend Specialties 6.4.15 June 04 2015 Posted in

Great looking Amberjack from Florida just came in.  While Amberjack is often outshined by its more well-known relative, Hamachi, this value fish packs a lot of punch.  Amberjacks are prized for their sweet, mild flavor and buttery texture and are delicious pan-seared, baked or grilled.  Amberjack run from Nova Scotia to Brazil, with most concentrations in the Gulf of Mexico.

Blowfish Tails and Weekend Specialties 5.28.15 May 27 2015 Posted in

First Blowfish tails of the year are in this weekend, marking another unofficial start to summer.  Rest assured, we’re not talking about the poisonous Fugu.  These blowfish tails come from U.S blowfish (or Sea Squab) and are perfectly harmless.  They’re prized for their fillets, which resemble tiny chicken drumsticks, with a single bone running between two morsels of flesh.  The meat is lean and white, and meaty rather than flaky.

Memorial Day Hours 2014 May 20 2015 Posted in

We're looking forward to kicking off the summer with an action packed weekend in the store. Please note that we will be open during normal business hours Saturday (9:30am-9pm) and Sunday (10:00am - 8PM).  We will be closed on Memorial Day, Monday May 25th.

Live Blue Crabs and Weekend Specialties 5.21.15 May 20 2015 Posted in

The official start of summer is here and nothing says summer like blue crabs from the Chesapeake Bay.   We’ll have the first live #1 Jimmies of the season this Friday in anticipation of Memorial Day weekend.   For those of you not in the know, males are referred to as “Jimmies” and females are called “sooks.”  Jimmies are generally larger, meatier and more desirable for eating whole.  Number ones refer to the largest crabs out there but “large” is a bit of a shooting target.  Rest assured, number ones assure you the largest available.  Number twos are slightly smaller, and finally, number threes are usually a mix of un-graded, small crabs.  Usually all female.   Enough of the education though.  Stop on by, grab some crabs, old bay and let the good times roll!

Please note we will be open normal hours this weekend, but will be CLOSED in observance of Memorial Day on Monday May 25th

Mother's Day Weekend Specialties 5.7.15 May 06 2015 Posted in

Mother’s day is this weekend and if you’re planning on giving Mom the ultimate gift of a home cooked meal, we’ve got you covered.  Of course, taking Mom out for a nice steamed lobster dinner either in the store or at Cull&Pistol would probably be welcomed as well.  This week, we’re featuring fresh Sablefish (Black Cod) from Oregon.  Now you’re probably wondering what fresh has to do with anything (of course the quality is good).  In fact, Sablefish is one of two fish, Chilean Sea Bass is the other, that always come to us in a frozen state.  The high oil content and long distance traveled to get here make Sablefish an ideal candidate to be frozen at sea in whole form and the vast majority of all product not destined for the west coast comes in this way.   This week we’ve happened to get our hands on some great looking fresh product.  This Sablefish is line caught off the coast of Oregon and has a rich, mild, and distinctive flavor with soft, velvety texture and large, moist white flakes.

Monkfish Cheeks and Weekend Specialties 4.30.15 April 29 2015 Posted in

Take one look at the picture above and you’re probably instantly grossed out.  Often times, the uglier the fish, the tastier, and Monkfish is certainly no exception.  Monkfish are prized for their tails (in fact most heads are discarded on the boat), however the cheeks are arguably the best part.  Monkfish cheeks have a firm, dense and succulent meat.  Great cheeks arriving this Friday, so check them out!

Monchong and Weekend Specialties 4.23.15 April 22 2015 Posted in

Monchong is the headliner this week and we have some gorgeous whole fish incoming from Hawaii for the weekend.  Monchong are also known as Sickle Pomfret and has a pinkish flesh, firm texture and moderate flavor.  Its firm texture lends well to many preparations, however in our opinion the grill or the broiler is the way to go.  Monchong are caught in deep waters and are typically by-catch of tuna and sword longliners.  As by-catch goes, it doesn’t get better than this!

Soft Shells and Weekend Specialties 4.16.15 April 15 2015 Posted in

We thought they would never come.  Finally, Soft Shells will be in the store this Friday and until they’re sold out.  For those of you who don't know, soft shells on the east coast refer to Blue Crabs which have recently molted their old exoskeleton and are typically available from April to September. They begin to molt when water temperatures rise and the soft shell season works its way from south to north with the first availability typically coming from Florida before the season begins in the in the Chesapeake Bay, where over 90% of the total Soft Shell catch comes from. Over its two to three year lifespan, a blue crab outgrows and sheds its shell about 20 times! Once the blue crab molts, it typically takes four days for its shell to harden and in between, as you may know, the shell is soft enough to eat (thus Soft Shells). Watermen harvest soft shell crabs as peelers (about to shed), rank peelers (within hours of shedding), and busters (in the process of shedding). Soft Shells are great sautéed in butter or fried up as soft shell crab sandwich, and all they need is a simple cleaning.

Spanish Sardines and Weekend Specialties 3.25.15 March 25 2015 Posted in

We have quite a bit of really great finfish coming in for the weekend, however we’re most excited about the 2 boxes of pristine Spanish sardines coming in Thursday morning.  These Sardines are in rigor and are screaming for the grill (or the broiler).  The soft, dark and rather oily flesh takes well to direct heat and the finished product yields a rich and full flavor.  If you’re game, eat them whole, the bones are edible and add a nice crunch.

White Perch and Weekend Specialties 3.19.15 March 18 2015 Posted in

Last week's newsletter featured a classic spring finfish in Shad, and this week we bring you another.  We have some fantastic White Perch coming in from the Chesapeake Bay.   The Chesapeake white perch population are closely related to Striped Bass and has a mild, sweet flavor.  The white perch live in brackish and freshwater rivers of the bay and spend their entire life in the bay and tidal tributaries.  As water temps increase, White Perch head upstream to their spawning grounds.  It’s believed that each Chesapeake bay river has its own White Perch population since they don't venture far from the river they were born in.  These Perch are typically small, the record catch weighing in at 2 pounds, 10 ounces.  Due to their size, White Perch as best pan-fried dredged in flour.

Shad and Weekend Specialties 3.12.15 March 11 2015 Posted in

In the seafood world, there is no better bellwether of spring than the start of the Shad season along the east coast.  Similar to wild salmon, Shad are most prized during the period of time before their spawn when their flesh has a higher fat content.  As the weather warms, Shad make their way up the east coast from Florida to Labrador during spring, lasting until right before June.  After June, shad become too oily and mushy.  While most fanatics prize Shad for their roe, the fillets are quite desirable as well, with sweet, delicate flesh, similar to silver-green herring.  Shad roe on the other hand is rich in flavor, with a firm, delicate texture.  Some call it the foie gras of the sea, but we’ll let you decide.

Last week’s email highlighted the terrible conditions facing the seafood industry this winter.  In light of yet another winter storm system coming through, it’s high time we start thinking about spring.  What’s signifies spring and summer better than wild king salmon?!  While they’re a long way off from doing their annual river runs, we have a nice shot of troll caught wild king salmon from Sitka Sound, Alaska arriving today.  Come by; grab some king salmon for the weekend and think of truly warmer temps.

Weekend Specialties 2.25.15 February 25 2015 Posted in

We don’t have to remind you its cold out there.  This winter has been brutal and this string of near zero temps are finally taking their toll on supply.  Take a look at the above picture from our friends at Acadia Aqua farms who bring us our Maine blue mussels.  That’s Frenchman’s bay you’re looking at and it’s completely iced over!  Of course when the deep freeze is on from the Chesapeake up to Maine, this means shellfish and finfish are particularly hard to come by.  Not to worry though, we still have plenty of oysters from the Canadian Maritimes (the ice is so thick it doesn't faze them) and finfish from points south to keep you happy for the weekend.

Skrei Cod and Weekend Specialties 2.19.15 February 18 2015 Posted in

If you've been reading closely over the past two years (we can hope right?!) you’re probably very familiar with Skrei Cod from Norway.  Skrei Cod are in full force off the coast of Norway right now and we should expect to see consistent supply over the next month. Skrei is a Norwegian cod that migrates from the Barents Sea to its spawning grounds off Norway's snow covered, mountainous North coast.  In order to be classified as Skrei, the cod have to be fully mature (typically 5+ years), and in pristine condition (i.e. no scratches, bruising or other injuries).  All of this means Skrei has a fresh, clean flavor with large, smooth white flakes and a firm texture.  It's cod at its finest!  To top it off, the Skrei fishery is MSC certified for sustainability.
