Skrei Cod and Weekend Specialties 2.4.16 February 03 2016 Posted in

Skrei Cod are in full force off the coast of Norway right now and we should expect to see consistent supply over the next month. Skrei is a Norwegian cod that migrates from the Barents Sea to its spawning grounds off Norway's snow covered, mountainous North coast. In order to be classified as Skrei, the cod have to be fully mature (typically 5+ years), and in pristine condition (i.e. no scratches, bruising or other injuries). All of this means Skrei has a fresh, clean flavor with large, smooth white flakes and a firm texture. It's cod at its finest! To top it off, the Skrei fishery is MSC certified for sustainability.

Try this great receipe this weekend with Skrei. Delicate, tender, flaky and meaty cod is paired with small briny clams in a verdant parsley and garlic sauce

We all need a little escape from last weekend’s snow dump.  If you’re not on a beach right now, we’d highly recommend a figurative vacation in the form of Mauritius Redfish.  On the gorgeous island of Mauritius, innovative fish farmers are raising a delicious redfish.  Mauritius Redfish are given nutritious, sustainable feed and plenty of room to grown.  No chemicals are used and artisans conduct daily dives to check on the health and welfare of the redfish and surrounding environment.  These practices yield a high quality fish with a delicate flavor and rich texture.

Pacific Saury and Weekend Specialties 1.7.15 January 06 2016 Posted in

Happy New Year to all.  We’ve been lacking in the blog posting due to the holidays, but we’re coming strong for the New Year.  This week we’ll have some amazing Pacific Saury from Japan.  Sauries are small with dark, meaty, rich-flavored flesh that provides bone-free fillets.  They’re most abundant in the late autumn and winter and are caught using Japanese technique of attracting them by lights and scoop-netting them.  Sauries are great on the grill, but also stand up well to a nice braise.

Wreckfish, Holiday Hours and Ordering Polices and Weekend Specialties 12.17.15 December 16 2015 Posted in

Wreckfish season will be over in a few weeks and we have one last final run coming in this week so take advantage as it won’t be back until mid-April.  Wreckfish have thick, mild flavor fillet with skin well suited to pan searing.

Live Sea Urchin and Weekend Specialties 12.3.15 December 02 2015 Posted in

We’ve had a good amount of live sea urchin over the past couple months, but as we approach the colder months, the quality has gotten better and better as evidenced in the above picture.  These sea urchin were harvested by hand off the coast of California and produce uni with an incredibly salty ocean scent and sweet, buttery taste.  Enjoy this grade A sea urchin weekly from Wednesday-Sunday depending on deliveries.

Live Peconic Bay Scallops and Weekend Specialties 11.5.15 November 04 2015 Posted in

The first Monday of November marks the start of Peconic Bay scallop season and it’s always eagerly awaited by aficionados.  While Nantuckets seem to be more popular, we’ll take these super sweet local beauties any day.  The season starts in November and is scheduled to last 5 months although most of the production usually happens in the first month.  Last year’s season was a bit of a bust, but this year hopes to be a better one, with cooler temps in the summer potentially leading to better growth.  We’ll have live peconics in this weekend and we expect to see shucked quite soon.  No recipe needed for the live ones, just shuck them and pop 'em in your mouth!

Parrot Fish and Weekend Specialties 10.29.15 October 28 2015 Posted in

Bright and colorful parrot fish will be arriving this weekend straight from Brazil.  While they don’t retain their bright color upon dying, parrot fish are known for their vibrant colors which help them blend into reef habitats.  Their part of the wrasse family and are closely related to blackfish or tautog.  Perhaps the buckteeth gave it away!  In honor of their close relationship, try this great blackfish recipe and sub parrot fish.

Peak Oyster Season and Weekend Specialties 10.15.15 October 14 2015 Posted in

This Sunday, we’ll be hosting the 7th annual Oyster Bash as part of the New York Food and Wine Festival.  While tickets are long gone, that doesn’t mean you can’t enjoy oysters this weekend.  It’s peak oyster season and if anyone has paid any attention to these e-mails, you’re well aware we carry quite a few bi-valves at any given time, both in the store and Cull&Pistol.  What makes it peak oyster season?  Glad you asked.  Oysters are seasonal creatures. Like other animals, they hibernate in the winter, so to prepare for this, they build up their glycogen stores (a type of sugar) by stuffing themselves in the fall. This process makes them sweet and plump during those fall months -- an ideal state for oyster eaters. So, if we don’t see you at Oyster Bash, stop on by Chelsea Market!

Maine Lobster Bake and Weekend Specialties 10.8.15 October 06 2015 Posted in

We’re keeping the boil/bake tradition alive at Cull & Pistol!  Join us for the first of many annual Lobster Bakes on Thursday, October 29th.  For $85 per person you’ll get ½ dozen Maine oysters, not one, but two 1 ¼ lb lobsters, grilled corn, potatoes, cast iron cornbread, chocolate pudding and all you can drink Fishguys Pils beer.  We hope to see you all there for what’s sure to be a great meal!

Corvina and Weekend Specialties 10.1.15 September 30 2015 Posted in

This week, we’re featuring corvina from Nicaragua.  Corvina is a member of the croaker and drum family, named because they have large otoliths and air bladders that males can resonate, producing a sound.  Corvina has a nice mild flavor, and medium flake making it great for ceviche, the popular way of preparing it in Central and South America. Check out this great ceviche recipe and sub the fluke with corvina.

Triggerfish and Weekend Specialties 9.23.15 September 23 2015 Posted in

We have some great Triggerfish coming in from the Atlantic coast of Florida.  Triggerfish aren’t caught in large numbers commercially, but they have somewhat of a cult following due to their firm, lean flesh and fine flake.    Triggers can be found year round, but they’re most common in the summer caught using hook and line or as by-catch from trawler and gillnet fisheries.  Check out this baked Triggerfish with dill recipe here.

Anchovies and Weekend Specialties 9.10.15 September 09 2015 Posted in

There is so much more to the anchovy than just the canned variety.  We happen to think a true fresh anchovy, while hard to find in the U.S., will turn anyone who tries them into a believer.  Fresh anchovies have a soft, smooth texture; and rich, distinctive, lightly oily flavor with edible bones, perfect for eating whole.  We have a limited amount of fresh anchovies from the Mediterranean in this Thursday and they’re the perfect antidote for the end of summer blues.  Check out this very easy, yet delicious fried anchovy recipe.

Grey Sole and Weekend Specialties 9.3.15 September 02 2015 Posted in

Flounder species are seemingly prolific in northern waters, but not all are created equal.  This week we have some great looking Grey Sole (aka witch flounder) in from Massachusetts.  While peak availability is typically between November and April, we do see it occasionally in the summer months.  When it’s around, grab it!  Grey Sole is prized for its sweet flavor and fine flake.   Check out this great sole fillets with herbed wine sauce recipe below for some inspiration.

Marlin and Weekend Specialties 8.27.15 August 26 2015 Posted in

This week we’re featuring some great looking Blue Marlin, coming in from Hawaii.  Marlin has a rich, full flavor, similar to swordfish, with a meaty texture.  They’re typically caught using long lines in Hawaii and Florida and are available year-round on a limited basis.  Marlin’s meaty texture makes it an ideal for the grill.  Check out this grilled marlin recipe here.
