We don’t have to remind you its cold out there.  This winter has been brutal and this string of near zero temps are finally taking their toll on supply.  Take a look at the above picture from our friends at Acadia Aqua farms who bring us our Maine blue mussels.  That’s Frenchman’s bay you’re looking at and it’s completely iced over!  Of course when the deep freeze is on from the Chesapeake up to Maine, this means shellfish and finfish are particularly hard to come by.  Not to worry though, we still have plenty of oysters from the Canadian Maritimes (the ice is so thick it doesn't faze them) and finfish from points south to keep you happy for the weekend.

Skrei Cod and Weekend Specialties 2.19.15 February 18 2015 Posted in

If you've been reading closely over the past two years (we can hope right?!) you’re probably very familiar with Skrei Cod from Norway.  Skrei Cod are in full force off the coast of Norway right now and we should expect to see consistent supply over the next month. Skrei is a Norwegian cod that migrates from the Barents Sea to its spawning grounds off Norway's snow covered, mountainous North coast.  In order to be classified as Skrei, the cod have to be fully mature (typically 5+ years), and in pristine condition (i.e. no scratches, bruising or other injuries).  All of this means Skrei has a fresh, clean flavor with large, smooth white flakes and a firm texture.  It's cod at its finest!  To top it off, the Skrei fishery is MSC certified for sustainability.

Barramundi and Weekend Specialties 2.5.15 February 04 2015 Posted in

Aquaculture has gotten a bad rap over the past few years. Concerns about the environmental impact of farming operations; the various forms of feeds, dyes and antibiotics that different farms use; and the carbon-efficiency of aquaculture have taken center stage in the farmed vs. wild debate. And while we agree that there are farms that you should avoid, we also feel that responsible aquaculture is an important part of achieving the sustainability balance.  The fine folks at Australis Aquaculture are a perfect example of aquaculture done right with their signature farmed Barramundi from Turner Falls, MA.  What makes the Barramundi such a great example of sustainable aquaculture?  Glad you asked:

How is it farmed? -  Barramundi are raised in closed in-land re-circulating tanks.  99% of Australis’ water is recycled and any remaining fish waste is donated to fertilizer to local farmers.  What’s more, in-land tanks help reduce fish escapes, which can be harmful to wild fish populations and the surrounding environment.

What are the inputs? - Barramundi are not given antibiotics or any other additives, because they don’t need them.  Fish are stocked in low densities to prevent stress.  What’s more, unlike other fish, Barramundi are well suited to be in close quarters.  As wild fish in the Outback, Barramundi often find themselves trapped in ponds as river beds dry up in the summer season.   

What is the feed ratio/how are the fish fed? - Feed ratio refers to the amount of dry feed it takes to produce one pound of fish.  When considering resource shortages, ratios that are far above 1:1 don’t make much sense as you’re taking more out of the environment to produce less (for example, consider farmed Bluefin tuna which can get as high as 15:1).  Barramundi has a feed ratio of 1.76:1.  Barramundi feed comes from certified sustainable wild fishers as well as non-seafood sources.  

The sustainability of a particular fish is relatively moot if it doesn’t taste good.   Lucky for you, Barramundi fits the bill, with a mild, buttery flavor.  It’s also has high levels of Omega-3s.  Barramundi will be available this weekend.  Help us support sustainable aquaculture by checking it out!

Tasting Menu Series and Weekend Specialties 1.29.15 January 28 2015 Posted in

In case you haven’t already noticed, there’s a lot of great food and wine being served at Cull&Pistol.  There’s also always a ton of great seasonal specialties coming into the retail market on a daily basis.  Given these two aforementioned facts, it’s only fitting that we roll out the tasting menu.  We’re pleased to announce the first iteration of our ongoing tasting menu series at Cull&Pistol available nightly from Thursday-Sunday.  The 5 course tasting menus will feature the very best of what the retail store has to offer with exceptional wine pairings and will change frequently.  First up, the Alsatian Wine Dinner!  Check out the menu here.

While the tasting menu seems like a no brainer for the weekend, (we assume you can’t eat the tasting menu every night, however if you’re so inclined we’ll welcome you with open arms) we have some excellent finfish options available from Hawaii to get you over the cold and snow.

Due to the increased volume in our store prior to Christmas and New Year’s, please note the following policies for placing advanced orders at The Lobster Place: 

Pre-order Pickups: We can only accept Pre-Order Pick-Ups on 12/23, 12/24, 12/30 & 12/31 for Clambakes & Platters.  All other raw product will be handled on a first come first serve basis in our store

Home Deliveries: We will not have delivery service on 12/23, 12/24, 12/30 & 12/31        

FedEx: FedEx orders for arrival on 12/24 and 12/31 must be placed by 12pm on the preceding Tuesday (12/22 and 12/29).

Rest assured that we will be stocking up heavily on all items for Christmas Eve and New Year’s Eve and will have plenty of inventory on hand.  However, there is a possibility that we may run out of certain items later in the day so, if possible, we encourage you to get your seafood shopping done earlier.

Thanksgiving Hours and Ordering Policies 2014 November 18 2014 Posted in

Please note that we will be closed on Thanksgiving Day and open normal business hours all other days during the Thanksgiving week and weekend.  Due to the increased volume in our store on the Wednesday before Thanksgiving, we will only be accepting pre-orders for platters and clambakes on that day.  However, we will have plenty of product on hand, including lobster, shrimp, smoked salmon, crab and oysters and do not anticipate running out.  We’re also in the process of working with our suppliers to source a few different specialty items that we hope to have in stock during the holiday week.  Stay tuned and check back on our blog for further updates.  And of course, if you have any specific questions or would like to inquire further about product availability, feel free to give us a call at 212-255-5672 and we’d be happy to assist you.

Cod Cheeks and Weekend Specialties 11.13.14 November 13 2014 Posted in

Some nice off cuts in the store this weekend, highlighted by some gorgeous cod cheeks coming in this Friday.  Cod cheeks are from the jaw of Cod fish and are very sweet and moist, but often overlooked.  Last time we had them in, Cull&Pistol ran a fantastic special of panko crusted cod cheeks, curried carrot emulsion, pickled carrots and cauliflower and micro cilantro (pictured above).  Pick up some this weekend and let us know how you made ‘em.  Tag @fishguysnyc on any pics to share.

Bay Scallops and Weekend Specialties 11.6.15 November 05 2014 Posted in

Bay scallop season is underway and we’ll have four different types in Lobster Place and Cull&Pistol.  The Peconic bay scallop season started this Monday and we’ll have shucked and live scallops on the half shell.  Word on the bay is that the season is off to a strong start.  In case you want to compare and add to the age old debate of what bay scallops is better, we’ll have Martha’s Vineyard Bay scallops as well.  Of course, if you don’t feel like cooking, come on over to Cull&Pistol where were featuring Martha’s Vineyard bays, fresh cranberries, pickled crosnes, and brown butter (pictured above).

Sanma and Weekend Specialties 10.16.14 October 16 2014 Posted in

Sanma (aka pacific saury) season has begun and we've been bringing in some pristine fish straight from Japan.  Sanma are typically found in the North Pacific off the coast of Japan to the Gulf of Alaska and are generally caught using the technique of attracting them by lights and scoop-netting them.  Sanma are small fish with dark, meaty, rich-flavored flesh that provides bone-free fillets.  They're best salted and grilled whole.

Our annual Oyster Bash on October 18th at the Standard Hotel Beer Garden is right around the corner.  Each year oyster lovers spend the afternoon hob-nobbing with our favorite oyster growers who will be on hand shucking and serving their delicious delicacies, and enjoy dishes from some of New York’s most renowned seafood chefs, including Cull & Pistol, as they offer their take on their favorite oyster preparations.  While the event is sold out, we have two tickets which will be offering at random to anyone who likes or shares the highlighted post at the top of our Lobster Place Facebook Page.

Blood Clams and Weekend Specialties — October 2, 2014 October 01 2014 Posted in

 

Those clams you see are Blood Clams and the red coloring is due to high levels of hemoglobin.  Make no mistake from their appearance, Blood Clams are deliciously crisp and are not as briny as littlenecks.  Fortunately for you, we managed to get our hands on a small amount of these succulent clams straight from the Cape for the weekend.  Raw bar keeps getting better.

Belon Oysters and Weekend Specialties — September 25, 2014 September 25 2014 Posted in

 

Maine Flat oyster (aka Belons) season has opened up this week and we should expect to see decent supply through the holidays.  A few quick notes about the Flats:  Maine Flats are a species (O. Edulis) originally from the Belon river estuary in France (hence the name Belons) that came to the eastern coast of the states in the last century.  Technically speaking, only oysters from the Belon river can be labeled “Belons,” similar to sparkling wine outside of the Champagne region.  Both “Flats” and “Belons” get thrown around in the U.S. though.  The oysters we source are wild and from a hard shell clam fishery in Harpswell, ME.  The Flat’s flavor profile is quite unique.  Instead of the wallop of brine most often associated with Gulf of Maine oysters (C. Virginica), the Flats open with metallic overtones, and finish with a mineral laced flourish.
