Despite being such an ugly fish, monkfish sure does pack a lot of flavor.  Most people experience the tail meat, which some describe as the “poor man’s lobster.”  As delicious as monkfish tails are, the monkfish liver is really the crown jewel.  With fat content of about 40%, monkfish livers eat like the foie gras of the sea.  Check some out this weekend to see what all the fuss is about.

Peconic Bay Scallops and Weekend Specialties 11.10.16 November 08 2016 Posted in

 

Peconic bay scallop season has begun this week.  While Nantuckets seem to be more popular, we’ll take these super sweet local beauties any day.  The season starts in the first week of November and is scheduled to last 5 months although most of the production usually happens in the first month.  The preliminary news regarding this season’s outlook is a little negative, with fishermen reporting lackluster hauls so far.  We’re hopeful things might change as more areas of the bay open up.  The good news is we’ll have both live Peconics and shucked Peconics in this weekend.  No recipe needed for the live ones, just shuck them and pop 'em in your mouth!

Florida Pompano and Weekend Specialties 11.3.16 November 02 2016 Posted in

 

We have a nice run of Florida pompano in from the Cape Canaveral area this weekend.  Despite the limited commercial harvest, Pompano is a favorite of ours due to their firm, rich flesh and mild, sweet, full-bodied flavor.  The Florida Atlantic fishery is well managed with good population levels.  Fishermen use cast nets, beach seines, and gillnets, used in unique ways to limit by-catch of other fish.  Great tasting fish and a well-managed fishery. What more can you ask for!

Pacific sea urchin get all the fame and attention, while Maine sea urchin are often forgotten. Don’t let that throw you off though, Maine sea urchins (Atlantic green urchins) are absolutely delightful, with a slightly sweet taste and a delicately smooth and buttery texture. Bruce Gore Coho Salmon and Weekend Specialties 10.13.16 October 11 2016 Posted in

If we’ve learned one thing being in the seafood business for over 40 years, the single most important determinant of seafood quality is how the product is handled from the moment its caught until it reaches your plate. You can have the freshest piece of fish, but if you throw it around, don’t bleed it in time or you aren’t careful filleting it, you’re always going to be disappointed.  Our buyers are always looking at how products are caught and handled when determining who to source fish from.  Sourcing wild salmon during the off-season winter months has always been a bit of a challenge. The product is available, but always frozen and the end result is typically a flavorless, mushy piece of fish.  Despite our customer’s desire to cook wild salmon during the fall and winter months, we’ve typically never carried it because the product available in the market just hasn’t been good enough.  This email isn’t about doom and gloom though!  Without further ado, introducing Bruce Gore frozen at sea king and coho salmon from Alaska. 

These fish are named after the man who pioneered the frozen at sea salmon process that produces such excellent results.  Each fish is caught by hook and line, individually cleaned, and frozen on family operated fishing vessels in Alaska within two hours of being caught.  We then thaw it out over an extended period of time at temps below 38 degrees.  The end result is a fish of impeccable texture and taste and not reminiscent of any frozen fish we’ve seen before.  In fact, we’ll even say that this product beats most of the fresh salmon we see during the summer!  Bruce Gore wild coho salmon will be available daily so come by and check it out.

Maine Belon Oyster Season has Started and Weekend Specialties 9.29.16 September 29 2016 Posted in

Maine Flat oyster (aka Belons) season has opened and we should expect to see decent supply through the holidays.  A few quick notes about the Flats:  Maine Flats are a species (O. Edulis) originally from the Belon river estuary in France (hence the name Belons) that came to the eastern coast of the states in the last century.  Technically speaking, only oysters from the Belon river can be labeled “Belons,” similar to sparkling wine outside of the Champagne region.  Both “Flats” and “Belons” get thrown around in the U.S. though.  The oysters we source are wild and from a hard shell clam fishery in Harpswell, ME.  The Flat’s flavor profile is quite unique.  Instead of the wallop of brine most often associated with Gulf of Maine oysters (C. Virginica), the Flats open with metallic overtones, and finish with a mineral laced flourish.

Sanma and Weekend Specialties 9.8.16 September 07 2016 Posted in

Sanma (aka pacific saury) season has begun and we've been bringing in some pristine fish straight from Japan.  Sanma are typically found in the North Pacific off the coast of Japan to the Gulf of Alaska and are generally caught using the technique of attracting them by lights and scoop-netting them.  Sanma are small fish with dark, meaty, rich-flavored flesh that provides bone-free fillets.  They're best salted and grilled whole.

Blue Shrimp and Weekend Specialties 8.18.16 August 17 2016 Posted in

Our favorite head-on blue shrimp are back after a two-year hiatus and are just as good as when we last saw them.  Farmed in net pens in Northern Brunei, these shrimp are super sweet and tender and great for any type of application.  Don’t sleep on these!

Hokkaido Uni and Weekend Specialties 8.11.16 August 11 2016 Posted in

 

California sea urchin is not in peak season, but the good news is we have some great uni trays from Hokkaido, Japan, flown in on Tuesday and Thursdays.  While the lobes are sometimes smaller than Santa Barbara uni, they’re just as tasty, if not better. Hokkaido uni are prized for because of the kombu or kelp they feed on, and the clean water where they live.   These uni trays come in a small 30g tray, perfect for a quick snack.

Bonito and Weekend Specialties 8.4.16 August 03 2016 Posted in

Bonito have begun their run up the east coast and we’ve got some really nice product in this weekend caught off the coast of Ocean City, MD using rod and reel gear.  These beauties are typically caught in the late summer and early fall along the east coast and produce a firm and moist fillet, with a large flake and pronounced flavor.

Wreckfish and Weekend Specialties 7.28.16 July 27 2016 Posted in

We have some great looking Wreckfish coming in this week.  Although Wreckfish are found all along the East Coast, most commercial landings are from the Charleston Bump, a deep-water bank located 80 to 100 miles off the cost of South Carolina.  Wreckfish enjoy deep-water habitats around sheltered structures and are caught using heavy-duty hydraulic reels with 1/8 inch cables.  The fishery is well managed to ensure long term sustainability.  While they can be tough to catch, the result is well worth the effort.  Wreck fish have a large flake, sweat flavor and nice skin that crisps well.

Tuna Belly and Weekend Specialties 7.7.16 July 06 2016 Posted in

It’s hot outside.   We all have our techniques for beating the heat, but eating refreshing cold meals is certainly one of the keys.  At the Lobster Place we’re all about eating ceviche, poke and raw fish to keep things manageable and this week we have some excellent yellowfin tuna belly, flown direct from Hawaii, to help things out in that department.  Tuna belly has a high fattiness that produces a moderate, rich and buttery flavor, perfect raw to keep things cool.

Razor Clams and Weekend Specialties 6.23.16 June 22 2016 Posted in

While Razor Clams are more or less a staple in the retail store, they’re always worthy of a shout out in the summer time.  More abundant because summer low tides happen more often in daylight, these strong flavored razors are also a perfect, simple summer time protein to pull off.  Simply cook in a skillet with white wine, chiles and garlic and you’ll be in Barcelona in no time.

Wahoo and Weekend Specialties 6.16.16 June 15 2016 Posted in

 

Nice shot of wahoo in for the weekend so fire up those grills!  This week’s wahoo hails from Panama City, Florida and was caught using hook and line.  Wahoo has a fatty flavor similar to albacore, but is sweeter with a large-flaked texture.  They call it “ono” in Hawaii, which means “good to eat.”

Mahimahi and Weekend Specialties 6.9.16 June 08 2016 Posted in

On the east coast, summer seafood options get a much needed boost as migratory fish such as tuna, sword and mahimahi make their way up the gulf stream to points up north to take advantage of the warmer water and feeding that comes along with it.  While we are of the humble opinion that U.S. Atlantic fish stocks provide some of the best eating fish around, it’s always nice to see some new faces in the lineup.  As temps start to warm up, we’ve started to see some excellent hook and line mahimahi coming out of the south and mid-Atlantic.  This week’s mahimahi hails from South Carolina and has a moderate flavor with lean and fairly firm, large moist flakes.  Mahimahi is great just about any way you can think to cook it and it tastes even better when it’s caught this close.
