There is so much more to the anchovy than just the canned variety. We happen to think a true fresh anchovy, while hard to find in the U.S., will turn anyone who tries them into a believer. Fresh anchovies have a soft, smooth texture; and rich, distinctive, lightly oily flavor with edible bones, perfect for eating whole. We have a limited amount of fresh anchovies from the Mediterranean in this Thursday and they’re the perfect seafood to bring in spring. Check out this very easy, yet delicious fried anchovy recipe.
