Some gorgeous Pompano in this weekend from Florida.  While commercial harvests are typically low, Pompano is available year round, with most landings coming between spring and fall.  This fish is worth the wait, with strong, full flavor and a succulent and oily flesh.  Try this recipe here for inspiration.
