Coho and Weekend Specialties 7.23.15 July 22 2015 Posted in

Summer hits keep on coming.  We’re starting to see more consistent supply of wild Cohos and we have first product of season coming in today.  Cohos are always late to the party when it comes to summer salmon runs, but they’re worth the wait.  More of a value buy when compared to Kings, Coho’s have a mild salmon taste and a large-flaked meat with a beautiful orange color.  They’re caught in rivers through the Pacific Northwest using a variety of methods including trolling, seines and gillnets.  Coho’s run from late summer to fall. Check out this broiled salmon with cucumber-dill butter sauce here for any inspiration.
