There is so much more to the anchovy than just the canned variety.  We happen to think a true fresh anchovy, while hard to find in the U.S., will turn anyone who tries them into a believer.  Fresh anchovies have a soft, smooth texture; and rich, distinctive, lightly oily flavor with edible bones, perfect for eating whole.  We have a limited amount of fresh anchovies from the Mediterranean in this Thursday and they’re the perfect antidote for the end of summer blues.  Check out this very easy, yet delicious fried anchovy recipe.
