Caribbean Wahoo

Ingredients

  • 1 1/2 lbs of Wahoo
  • Lime
  • 1 can unsweetened coconut milk
  • 1 scotch bonnet or other hot chili, finely minced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 sweet onion, diced
  • 2 ripe plantains, sliced diagonally

    Directions

    Season 1 ½ lbs of wahoo cut into chunks with salt, pepper, and lime juice and place in a baking dish.  Combine 1 can unsweetened coconut milk with 1 finely minced scotch bonnet or other hot chili, 1 each diced red and green bell pepper, 1 diced sweet onion, and 2 ripe plantains, sliced diagonally, and spoon over the fish.  Cover and bake at 375 degrees for 20 minutes, or until fish flakes.

    Serves 4
