Tuna Poke

Provided by the Lobster Place/ Cull&Pistol Test Kitchen

The Hawaiian classic raw preparation is a quick and healthy snack, and also makes a great appetizer for warmer weather dinner parties

  • 1 pound sushi quality tuna, cut into ½” pieces
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • ½ bunch scallions, root removed and sliced thin
  • 1 cup pineapple, cut into 1/2” pieces
  • 1 jalapeno (seeds removed), diced
  • 1 teaspoon ginger, peeled and grated
  • 1 tablespoon toasted sesame seeds
  • 3 radishes, thinly sliced
  • Salt

Combine all ingredients in a bowl except for the sesame seeds and radish and toss together gently.  Allow to marinate for 5 minutes at room temperature.  Remove tuna from the marinade, divide into 6 serving portions, garnish each with the sesame seeds and shaved radish, and serve immediately.
