Along with the heat, the dog days of summer bring South Atlantic fish up the Gulf Stream to the Northeastern Atlantic coast.  Bonito happens to be one of these fish and its presence is always welcome this time of year.  Bonito are available in the summer and early fall in the Northeast.  Bonito are members of the Mackerel family; although they are often resemble small tuna.  Bonito have a pronounced tuna flavor with firm, fine flaked flesh.  Bonito are wild-caught typically using cast nets, gillnets, or hook and line methods.  This week’s catch is from Massachusetts.  Check out this great charred spiced bonito taco recipe here.
