This week, we’re featuring corvina from Nicaragua.  Corvina is a member of the croaker and drum family, named because they have large otoliths and air bladders that males can resonate, producing a sound.  Corvina has a nice mild flavor, and medium flake making it great for ceviche, the popular way of preparing it in Central and South America. Check out this great ceviche recipe and sub the fluke with corvina.
