A nice treat this week in the form of ocean perch (AKA Acadian redfish).  This week’s ocean perch was caught by the F/V Tara Lynn in the Gulf of Maine.  These 1.5-3lb fish are prized for their lean, flakey, moist meat.  Perfect baked, fried, whole steamed or poached.
