Icelandic Cod Cheeks and Weekend Specialties 4.20.17 April 19 2017 Posted in

Cod cheeks, once a fisherman’s secret, are quickly becoming mainstream.  Most cod comes to market H&G (headed and gutted) leaving the best parts behind.  Traditionally, fisherman and processors have held on to the tasty morsels of meat that come from the jaw of cod fish due to how tender, sweet and moist they are.  Lucky for you (and us) we’ve been able to source some great ones this weekend.  Come on down and see what everyone is talking about.

Soft Shells and Weekend Specialties 4.6.17 April 05 2017 Posted in

We thought they would never come.  Finally, Soft Shells will be in the store this Friday and until they’re sold out.  For those of you who don't know, soft shells on the east coast refer to Blue Crabs which have recently molted their old exoskeleton and are typically available from April to September. They begin to molt when water temperatures rise and the soft shell season works its way from south to north with the first availability typically coming from Florida before the season begins in the in the Chesapeake Bay, where over 90% of the total Soft Shell catch comes from. Over its two to three year lifespan, a blue crab outgrows and sheds its shell about 20 times! Once the blue crab molts, it typically takes four days for its shell to harden and in between, as you may know, the shell is soft enough to eat (thus Soft Shells). Watermen harvest soft shell crabs as peelers (about to shed), rank peelers (within hours of shedding), and busters (in the process of shedding). Soft Shells are great sautéed in butter or fried up as soft shell crab sandwich, and all they need is a simple cleaning.

Our favorite crab cocktail is back!  Jonah Crabs have been unavailable for quite some time because no one’s been producing them.  Typically Maine lobstermen catch these crab and sell them to processors too cook the claws and pick the meat.  The one producer of the crab claws stopped production due to costs, but we’ve found someone else willing to produce these deliciously sweet cocktail claws.  We expect to see good availability from now until the early summer and then resuming back in the fall after the peak Maine lobster season is over.

Shad and Weekend Specialties 2.23.17 February 22 2017 Posted in

In the seafood world, there is no better bellwether of spring than the start of the Shad season along the east coast.  Similar to wild salmon, Shad are most prized during the period of time before their spawn when their flesh has a higher fat content.  As the weather warms, Shad make their way up the east coast from Florida to Labrador during spring, lasting until right before June.  After June, shad become too oily and mushy.  While most fanatics prize Shad for their roe, the fillets are quite desirable as well, with sweet, delicate flesh, similar to herring.  Shad roe on the other hand is rich in flavor, with a firm, delicate texture.  Some call it the foie gras of the sea, but we’ll let you decide.

Peconic Bay Scallops and Weekend Specialties 11.10.16 November 08 2016 Posted in

Peconic bay scallop season has begun this week.  While Nantuckets seem to be more popular, we’ll take these super sweet local beauties any day.  The season starts in the first week of November and is scheduled to last 5 months although most of the production usually happens in the first month.  The preliminary news regarding this season’s outlook is a little negative, with fishermen reporting lackluster hauls so far.  We’re hopeful things might change as more areas of the bay open up.  The good news is we’ll have both live Peconics and shucked Peconics in this weekend.  No recipe needed for the live ones, just shuck them and pop 'em in your mouth!

Tripletail and weekend specialties 5.19.16 May 18 2016 Posted in

We have some really nice tripletail coming in from Panama for the weekend.  Tripletail is called tripletail, because, well…. it has three tails.  They’re notoriously difficult to catch, but their super sweet meat is well worth the trouble.  Most anglers will tell you they’ll gladly toss the rest of their catch to get their hands on a tripletail.  Happy eating!

Shad Roe and Weekend Specialties 2.25.16 February 24 2016 Posted in

Spring is finally in the air!  While it’s still quite cold in some parts of the US and its still February, Shad have begun their annual migration up the coast and into rivers along the eastern seaboard where they conduct their yearly spawn.  While their fillets have a delicious, oily, rich flavor, their best known for their roe, which some aficionados liken to the “Foie Gras of the Sea.”  Lucky for you we have a small shipment coming in this Friday.  Shad roe are prefect pan fried in butter and lemon like in this recipe for pan-fried shad roe.

Mauritius Redfish and Weekend Specialties 1.28.16 January 27 2016 Posted in

We all need a little escape from last weekend’s snow dump.  If you’re not on a beach right now, we’d highly recommend a figurative vacation in the form of Mauritius Redfish.  On the gorgeous island of Mauritius, innovative fish farmers are raising a delicious redfish.  Mauritius Redfish are given nutritious, sustainable feed and plenty of room to grown.  No chemicals are used and artisans conduct daily dives to check on the health and welfare of the redfish and surrounding environment.  These practices yield a high quality fish with a delicate flavor and rich texture.

Sub redfish for striped bass in this great roasted striped bass with olive tapenade and star fruit recipe

Of course, if you don’t feel like cooking, stop on by Cull & Pistol and get the market fish, which will feature Mauritius Redfish all weekend.
