Cod cheeks, once a fisherman’s secret, are quickly becoming mainstream.  Most cod comes to market H&G (headed and gutted) leaving the best parts behind.  Traditionally, fisherman and processors have held on to the tasty morsels of meat that come from the jaw of cod fish due to how tender, sweet and moist they are.  Lucky for you (and us) we’ve been able to source some great ones this weekend.  Come on down and see what everyone is talking about.

Apalachicola Bay Pompano and Weekend Specialties 4.13.17 April 12 2017 Posted in

Good Friday is tomorrow, which means seafood is a must.  If you’re not a believer, you shouldn’t let that stop you from doing an all fish day!  We’ve got an amazing lineup of seafood and tons of great options.  Highlighting the list is gillnet caught pompano from the Gulf coast of Florida.  For those of you not in the know, pompano are prized for their firm, rich flesh and mild, sweet distinctive, full-bodied flavor.  Commercial harvests of these fish are typically small and most is consumed in Florida, so don’t sleep on this one!

Soft Shells and Weekend Specialties 4.6.17 April 05 2017 Posted in

We thought they would never come.  Finally, Soft Shells will be in the store this Friday and until they’re sold out.  For those of you who don't know, soft shells on the east coast refer to Blue Crabs which have recently molted their old exoskeleton and are typically available from April to September. They begin to molt when water temperatures rise and the soft shell season works its way from south to north with the first availability typically coming from Florida before the season begins in the in the Chesapeake Bay, where over 90% of the total Soft Shell catch comes from. Over its two to three year lifespan, a blue crab outgrows and sheds its shell about 20 times! Once the blue crab molts, it typically takes four days for its shell to harden and in between, as you may know, the shell is soft enough to eat (thus Soft Shells). Watermen harvest soft shell crabs as peelers (about to shed), rank peelers (within hours of shedding), and busters (in the process of shedding). Soft Shells are great sautéed in butter or fried up as soft shell crab sandwich, and all they need is a simple cleaning.

Ocean Perch and Weekend Specialties 3.30.17 March 29 2017 Posted in

 

A nice treat this week in the form of ocean perch (AKA Acadian redfish).  This week’s ocean perch was caught by the F/V Tara Lynn in the Gulf of Maine.  These 1.5-3lb fish are prized for their lean, flakey, moist meat.  Perfect baked, fried, whole steamed or poached.

Shad and Weekend Specialties 2.23.17 February 22 2017 Posted in

In the seafood world, there is no better bellwether of spring than the start of the Shad season along the east coast.  Similar to wild salmon, Shad are most prized during the period of time before their spawn when their flesh has a higher fat content.  As the weather warms, Shad make their way up the east coast from Florida to Labrador during spring, lasting until right before June.  After June, shad become too oily and mushy.  While most fanatics prize Shad for their roe, the fillets are quite desirable as well, with sweet, delicate flesh, similar to herring.  Shad roe on the other hand is rich in flavor, with a firm, delicate texture.  Some call it the foie gras of the sea, but we’ll let you decide.

Norwegian Skrei Cod and Weekend Specialties 2.16.17 February 15 2017 Posted in

Skrei Cod are in full force off the coast of Norway right now and we should expect to see consistent supply over the next month. Skrei is a Norwegian cod that migrates from the Barents Sea to its spawning grounds off Norway's snow covered, mountainous North coast. In order to be classified as Skrei, the cod have to be fully mature (typically 5+ years), and in pristine condition (i.e. no scratches, bruising or other injuries). All of this means Skrei has a fresh, clean flavor with large, smooth white flakes and a firm texture. It's cod at its finest! To top it off, the Skrei fishery is MSC certified for sustainability.

Maine Shrimp and Weekend Specialties 1.19.2017 January 18 2017 Posted in

Maine shrimp are back!  The 2017 season is actually shut down because of conservation concerns, however due to a scientific study on spawning, four shrimp trawlers and two trappers are collecting shrimp samples.  Lucky for us, we get to try these delicious, sweet roe-on shrimp that we’re once ubiquitous in winter time, but haven’t been around for 4 years now. Supplies are tight, so get in here fast!

Due to the increased volume in our store prior to Christmas and New Year’s, please note the following policies for placing advanced orders at The Lobster Place:

Pre-order Pickups: We can only accept Pre-Order Pick-Ups on 12/23, 12/24, 12/30 & 12/31 for Clambakes, Seafood Kits & Platters. All other raw product will be handled on a first come first serve basis in our store.

 

Local Home Deliveries: We will not have delivery service on 12/23, 12/24, 12/30 & 12/31

FedEx: FedEx orders for arrival on 12/24 and 12/31 must be placed by 12pm on the preceding Thursday (12/22 and 12/29).

Rest assured that we will be stocking up heavily on all items for Christmas Eve and New Year’s Eve and will have plenty of inventory on hand. However, there is a possibility that we may run out of certain items later in the day so, if possible, we encourage you to get your seafood shopping done earlier.

Open Blue Cobia and Holiday Hours 12.15.16 December 14 2016 Posted in

Open blue cobia is in the shop this week and is another example farmed fish done right.  These beauties are quite versatile.  Their skin produces wonderfully crisp fillets, while their nice fattiness lends well to any raw application.  More importantly though, you can feel good about eating this fish.  Raised in open ocean net pens 7 miles off the coast of Panama in the Caribbean sea, these fish are fed a fishmeal diet from sustainable sources and at no point are fed any hormones, contaminants, colorants or pesticides.  Moreover, the pen densities are super low (see above picture) allowing the fish to swim freely and the pens are designed to move with the current, producing virtually no nutrient or waste buildup in the surrounding environment.  Come on by and grab some for the weekend!

Monkfish Liver and Weekend Specialties 12.1.16 November 30 2016 Posted in



Despite being such an ugly fish, monkfish sure does pack a lot of flavor.  Most people experience the tail meat, which some describe as the “poor man’s lobster.”  As delicious as monkfish tails are, the monkfish liver is really the crown jewel.  With fat content of about 40%, monkfish livers eat like the foie gras of the sea.  Check some out this weekend to see what all the fuss is about.

Peconic Bay Scallops and Weekend Specialties 11.10.16 November 08 2016 Posted in

 

Peconic bay scallop season has begun this week.  While Nantuckets seem to be more popular, we’ll take these super sweet local beauties any day.  The season starts in the first week of November and is scheduled to last 5 months although most of the production usually happens in the first month.  The preliminary news regarding this season’s outlook is a little negative, with fishermen reporting lackluster hauls so far.  We’re hopeful things might change as more areas of the bay open up.  The good news is we’ll have both live Peconics and shucked Peconics in this weekend.  No recipe needed for the live ones, just shuck them and pop 'em in your mouth!

Florida Pompano and Weekend Specialties 11.3.16 November 02 2016 Posted in

 

We have a nice run of Florida pompano in from the Cape Canaveral area this weekend.  Despite the limited commercial harvest, Pompano is a favorite of ours due to their firm, rich flesh and mild, sweet, full-bodied flavor.  The Florida Atlantic fishery is well managed with good population levels.  Fishermen use cast nets, beach seines, and gillnets, used in unique ways to limit by-catch of other fish.  Great tasting fish and a well-managed fishery. What more can you ask for!

Maine Sea Urchin and Weekend Specialties 10.26.16 October 26 2016 Posted in

Pacific sea urchin get all the fame and attention, while Maine sea urchin are often forgotten. Don’t let that throw you off though, Maine sea urchins (Atlantic green urchins) are absolutely delightful, with a slightly sweet taste and a delicately smooth and buttery texture. Maine sea urchin season runs from September to April, so come on by and pick some up!

Bruce Gore Coho Salmon and Weekend Specialties 10.13.16 October 11 2016 Posted in

If we’ve learned one thing being in the seafood business for over 40 years, the single most important determinant of seafood quality is how the product is handled from the moment its caught until it reaches your plate. You can have the freshest piece of fish, but if you throw it around, don’t bleed it in time or you aren’t careful filleting it, you’re always going to be disappointed.  Our buyers are always looking at how products are caught and handled when determining who to source fish from.  Sourcing wild salmon during the off-season winter months has always been a bit of a challenge. The product is available, but always frozen and the end result is typically a flavorless, mushy piece of fish.  Despite our customer’s desire to cook wild salmon during the fall and winter months, we’ve typically never carried it because the product available in the market just hasn’t been good enough.  This email isn’t about doom and gloom though!  Without further ado, introducing Bruce Gore frozen at sea king and coho salmon from Alaska. 

These fish are named after the man who pioneered the frozen at sea salmon process that produces such excellent results.  Each fish is caught by hook and line, individually cleaned, and frozen on family operated fishing vessels in Alaska within two hours of being caught.  We then thaw it out over an extended period of time at temps below 38 degrees.  The end result is a fish of impeccable texture and taste and not reminiscent of any frozen fish we’ve seen before.  In fact, we’ll even say that this product beats most of the fresh salmon we see during the summer!  Bruce Gore wild coho salmon will be available daily so come by and check it out.

Maine Belon Oyster Season has Started and Weekend Specialties 9.29.16 September 29 2016 Posted in

Maine Flat oyster (aka Belons) season has opened and we should expect to see decent supply through the holidays.  A few quick notes about the Flats:  Maine Flats are a species (O. Edulis) originally from the Belon river estuary in France (hence the name Belons) that came to the eastern coast of the states in the last century.  Technically speaking, only oysters from the Belon river can be labeled “Belons,” similar to sparkling wine outside of the Champagne region.  Both “Flats” and “Belons” get thrown around in the U.S. though.  The oysters we source are wild and from a hard shell clam fishery in Harpswell, ME.  The Flat’s flavor profile is quite unique.  Instead of the wallop of brine most often associated with Gulf of Maine oysters (C. Virginica), the Flats open with metallic overtones, and finish with a mineral laced flourish.

There is so much more to the anchovy than just the canned variety.  We happen to think a true fresh anchovy, while hard to find in the U.S., will turn anyone who tries them into a believer.  Fresh anchovies have a soft, smooth texture; and rich, distinctive, lightly oily flavor with edible bones, perfect for eating whole.
