Grilled Saury January 06 2016 Posted in
- 1 whole saury, cleaned
- Juice of 1 lemon
- 2 tbs olive oil
- 2 tbs chopped parsley
- 2 crushed cloves of garlic
- Salt and pepper to taste
Take the pointed beak of a 1 1/2 to 2lb saury and stick it into the tail, making the fish into a ring. Marinate in the juice of the lemon, garlic, parsley, salt and pepper for 1 hour.
Drain, reserving marinade. Grill over a slow fire for 15 minutes, basting with marinade. Discard any remaining marinade and serve.
